Abstract (in English)

The National Association of Mexican World Heritage Cities was constituted in 1996 by the mayors of the Mexican cities inscribed on the UNESCO World Heritage List: Campeche, Mexico City, Guanajuato, Morelia, Oaxaca, Puebla, Querétaro, San Miguel de Allende, Tlacotalpan, Xochimilco, Zacatecas, Durango, San Luis Potosí and San Juan del Rio, in their capacity as historic centres belonging to the Cultural Itinerary "Camino Real de Tierra Adentro", with the aim of joining efforts aimed at conservation, dissemination of cultural wealth; tourism promotion and above all the sustainable development of their historic centres and their communities. In these 26 years of life, through an associative figure we have generated a successful mechanism to unite municipal governments, private sector, the federal government and international organisms, to promote diverse actions to reach our objectives. This gastronomic guide offers a culinary journey from the Campeche Bank to the Central Valleys of Durango, with a compilation of typical dishes as a representation of the traditional cuisine of Mexican World Heritage cities. Tradition, knowledge, flavours and aromas have been passed down from generation to generation and will continue to form the intangible heritage of those who receive them, creating memorable moments and delicious gastronomic anecdotes.

La Asociación Nacional de Ciudades Mexicanas del Patrimonio Mundial A. C. fue constituida en 1996 por los alcaldes de las ciudades mexicanas inscritas en la Lista de Patrimonio Mundial de la UNESCO: Campeche, Ciudad de México, Guanajuato, Morelia, Oaxaca, Puebla, Querétaro, San Miguel de Allende, Tlacotalpan, Xochimilco, Zacatecas; así como Durango, San Luis Potosí y San Juan del Rio, en su calidad de centros históricos pertenecientes al Itinerario Cultural “Camino Real de Tierra Adentro”, con la finalidad de unir esfuerzos encaminados a la conservación, difusión de la riqueza cultural; promoción turística y sobre todo al desarrollo sostenible de sus centros históricos y sus comunidades. En estos 26 años de vida, a través de una figura asociativa hemos generado un mecanismo exitoso para unir a gobiernos municipales, sector privado, Gobierno Federal y Organismos Internacionales, para impulsar acciones diversas para alcanzar nuestros objetivos. En esta Guía Gastronómica, se ofrece un viaje culinario desde la Sonda de Campeche hasta los Valles Centrales de Durango, con una recopilación de platillos típicos como una representación de la cocina tradicional de las ciudades mexicanas patrimonio mundial. Tradición, saberes, sabores y aromas que se han legado de generación en generación y seguirán conformando el patrimonio inmaterial de quienes las reciben, construyendo momentos memorables y deliciosas anécdotas gastronómicas.
